Ingredients:
Vegan Cheese Sauce
- 1 small butternut squash or 2 medium sweet potatoes, cubed
- 3 large carrots, cut into bite size chunks
- 1 clove garlic
- 1 tsp paprika
- ½ tbl Pink Himalayan Sea Salt
- 1 tbl apple cider vinegar
- ¼ tsp turmeric
- 1 tbl coconut oil
- 1 can coconut milk
- Water
Mac & Cheese
- 1 box red lentil, chickpea, quinoa or brown rice pasta
- 1 cup Vegan Cheese Sauce (add additional cup for sauce for desired consistency)
- Pink Himalayan Sea Salt
- Black pepper
- Water (to reach desired consistency)
Directions:
- Preheat the oven to 400º.
- Toss the squash and carrots with the coconut oil. Sprinkle it with a little sea salt. Spread evenly on a parchment lined baking sheet. Bake for 25 minutes until they start to caramelize.
- Add the veggies, garlic, spices, apple cider vinegar, coconut oil and ½ the coconut milk to a high speed blender or food processor. Begin processing.
- Slowly add in the remainder of the coconut milk. Blend until smooth.
- Add water until you get your desired thickness. If you want a thinner sauce and add a lot of water, add more spices to taste. Alternatively, do not thin the sauce until using it with something so you can decide what consistency you want based on the dish.
- Cook pasta according to package instructions.
- Drain, rinse and add back to the pot. Have the heat on medium-low.
- Add cheese sauce, using water to thin the mixture to your desired texture.
- Season to taste with salt and pepper.
